Swiss Steak

Take 1.25 lb round steak and pre-cut it into servings
Season it with 1/2 tsp. salt and 1/4 tsp. pepper, then
Sprinkle a layer of flour (should take 1 tbsp.) on them all, both sides.

Slic up a small onion, put with steaks in pan and brown, about 1/2 tsp. veg. oil.

Turn pan down to medium heat and add:
1.5 cup tomato juice
3/4 cup sliced mushrooms
1/4 cup sliced celery
1/4 green pepper
1/2 tsp worcestershire sauce
1/2 tsp sugar
1/8 tsp celery salt
pinch pepper

Then to low heat, cover, and cook until meat is tender.

For most of the crappy cuts you use in Swiss Steak, that's
1-1.5 hours.
